Roasted Pepper Salad
Ingredients
- 3 red bell peppersroasted
- 3 yellow bell peppersroasted
- 1tbsp extra virgin olive oil
- 1tsp balsamic vinegar
- 1/4cup light goat cheesecrumbled
- 2tbsp fresh basil or parsleychopped
- 2tbsp pine nutstoasted
Instructions

After roasting the peppers, cut them into chunks and arrange on a large plate or platter.

Whisk together the olive oil and vinegar in a small bowl and drizzle over the peppers.

Sprinkle with goat cheese, basil, and pine nuts.
