Skinny Peanut Butter and Banana Squares

Ingredients
- 1-1/2cups white whole wheat flour
- 1cup rolled oats
- 1/2tsp baking powder
- 1/2tsp sea salt
- 1/2cup coconut oilmelted
- 1/2cup raw honeymelted
- 1/4cup maple sugarcan use Sucanat or brown sugar
- 1 egg
- 1/2tsp vanilla extract
- 2 small ripe bananasmashed
- 1/2cup natural peanut butter
Instructions

Preheat oven to 350 degrees. Spray an 8x8 baking pan with olive oil.

In a medium bowl, stir together flour, oats, baking powder, and salt. Set aside.

Using an electric mixer on medium speed, beat coconut oil, honey, and maple sugar until combined. Add egg and vanilla, mix well. Mix in bananas and peanut butter, mixing just until combined.

Add in flour mixture and with a rubber spatula, stir until just combined.

Pour batter into prepared pan and smooth evenly (batter will be thick.) Bake for 30 minutes, or until a toothpick inserted in centre comes out clean. Cool in pan before cutting into bars...if you can wait that long!!
