A healthy and delicious low carb take on traditional Hamburger Helper.

To be completely honest, I’ve never had Hamburger Helper my entire life.
My mom is one of those moms who cooks everything from scratch. We never had anything out of a box!
Of course, I was jealous of my friends who were eating things like Hamburger Helper or Spaghettio’s, but now, I’m so thankful my mom never bought any of those things! We actually ate REAL food.
Anyway, even though I’ve never eaten Hamburger Helper out of a box, I still wanted to create a healthy, low carb version.
I mean, who wouldn’t like beef, bacon, and cheese together?!
What I love about my version of Hamburger Helper is that it’s full of veggies! Instead of using pasta, I’m using cauliflower!
And when you bake all of the ingredients up together, you get this hot, cheesy, delicious meal.
My Low Carb Hamburger Helper also makes great leftovers. I like to whip up a batch on the weekend and portion the leftovers for my lunches.
I hope you enjoy this low carb version of Hamburger Helper! It’s a favourite in our house 
- 1pound grass fed ground beef
- 1head cauliflowerapproximately 4 cups florets
- 1/2tsp onion powder
- 1/2 tsp garlic powder
- 1-1/2Tbsp butter
- 1-1/2Tbsp coconut flour
- 1cup nut milk
- 1-1/2 cups shredded cheddar cheese
- salt and pepper to taste
- 3slices baconcooked and chopped

Preheat oven to 350F. Prepare a casserole dish by spraying it with coconut oil. Set aside.

In a skillet, cook ground beef over medium heat. While it is browning, add garlic powder and onion powder.

While beef is cooking, cut cauliflower in small florets and steam for 6 - 8 minutes, until tender on the outside and still crisp in the middle.

When ground beef is cooked, add to prepared casserole dish. In the same skillet, melt butter over medium heat. Add flour and whisk together. Slowly add the nut milk and stir until mixture comes to a boil and begins to thicken.

Remove sauce from heat and stir in 1 cup of shredded cheese until melted. Sprinkle with salt and pepper to taste.

Add cauliflower and cheese sauce to the casserole dish and stir to combine everything.

Sprinkle with remaining cheese and bake for 20 minutes, until cheese is melted and bubbly.
