Your whole family will enjoy this cheesy Low Carb Spinach Gratin!

The first thing my kids say when I serve them spinach is, “EEWWW, what is this green stuff?!”
I proceed to tell them the whole “Popeye” story that spinach makes you strong, yada, yada, yada.
Of course, it never seems to matter how much of a story I tell about the vegetable in question, they still continue to complain about it.
However, I have found that they do complain a lot less about eating their vegetables since we’ve switched to a low carb, high fat way of eating.
Vegetables become a lot more desirable when they have some butter or them or are baked with cheese!

My spinach gratin recipe is how spinach was meant to be consumed—with lots of cheese! It is a huge hit in our household, the kids don’t complain about the “green” stuff on their plates. I perfected this recipe so it’s not ‘soupy’ like au gratin dishes you may have tasted in the past.
I’ve swapped out regular flour for coconut flour. Almond flour would work well too.
Don’t be fooled by the cheese, however, because this recipe contains over a pound of leafy greens, making it a dense and hearty side dish. This spinach gratin is perfect for everyday, a welcome holiday side dish and perfect for company. It’s a recipe that pairs well with just about anything!
- 2tbsp butter
- 1/2 yellow onionchopped
- 1clove garlicminced
- 1/4cup coconut flour
- 1cup heavy cream
- 1tsp sea salt
- 210 oz packages frozen spinachthawed and drained
- 1/3cup Parmesan cheese
- 1/4tsp fresh ground pepper
- 1/2 cup marble cheeseshredded

Preheat oven to 400F. Spray a casserole dish with coconut or avocado oil and set aside.

In a skillet, melt butter over medium heat. Add onion and cook for 3 - 4 minutes, until onion is translucent. Add garlic and cook an additional minute.

Add flour, stirring constantly for one minute. Add cream and salt and stur until combined. Bring liquid to a light boil, then reduce heat to low and simmer for 5 minutes, stirring constantly to prevent burning.

Squeeze and much liquid as possible from the spinach and add to the cream sauce. Add the Parmesan cheese and and pepper and stir until completely combined.

Transfer spinach mixture to prepared casserole dish and sprinkle with cheese.

Bake for 25 minutes, until cheese is golden and bubbly.
