One of my favourite meals growing up was stuffed baked potatoes. Baked potatoes stuffed with sour cream and cheese, sprinkled with some green onions and bacon for a special treat. It was to die for.
Fast forward a few years and potatoes are no longer a part of our weekly menu. It’s not that we NEVER eat them, it’s just very rare.
As I’ve gotten older, my carb tolerance is not what it used to be. Plus, I know the effects that carbs have on insulin (our fat storing hormone,) which is why I don’t eat too many of them anymore.
So what do you do if you still want the great taste of a stuffed baked potato?
You use cauliflower instead! Once you blend it up with some sour cream and cream cheese, it’s so creamy and smooth, you can’t tell the difference.
I made this once without telling my hubby what it was (he hates cauliflower BTW) and he had no idea this dish was made from cauliflower. Usually, I can’t fool him, but with this dish, I did 
My boys also love this side dish. It’s got everything they love in it: cauliflower, sour cream, cream cheese, cheese, and bacon. What’s NOT to love?!
The next time you want to enjoy a loaded baked potato, try this Low Carb Cauliflower Mash instead – you won’t be disappointed.
- 1head cauliflowera large head will suffice
- 2ounces sour cream
- 2 ounces cream cheese
- 3Tbsp butter
- 1/4tsp garlic powder
- 1cup shredded cheddar cheese
- 3slices nitrate-free bacon
- 2Tbsp chopped green onions

Preheat oven to 350F. Cut the cauliflower into florets and steam until tender.

While cauliflower is cooking, add bacon to a skillet and cook until crispy. Chop bacon into pieces.

Add the cooked cauliflower to a food processor and process until fluffy. Add the sour cream, cream cheese, butter, and garlic powder and process until it resembles mashed potatoes.

Put cauliflower mixture into an 8 x 8 baking dish. Stir in half the cheese and green onions.

Top the loaded cauliflower mash with the rest of the cheese, green onion, and bacon.

Bake in oven for 15 minutes, until cheese is melted and bubbly.
