A mixture of spinach, bacon, and mushrooms in a delicious and low carb quiche!

It’s that time of year again when the mornings and evenings are getting cooler and the leaves are starting to change colour! It’s the perfect time to cuddle on the couch at night and watch reruns of Seinfeld. No matter how many times I watch that show, I still laugh just as hard 
It’s also the perfect time to enjoy some delicious comfort food, don’t ya think?
I’m a huge fan of quiche! I gotta admit, I wasn’t a huge fan when I was a kid, but maybe I never had quiche like this?!
Spinach, bacon, and mushrooms make the perfect combination. Then pair that with some cheese and my favourite Low Carb Pie Crust and you’ve got yourself one delicious meal!
The whole family enjoyed this meal. Even my middle son who is my “picky” eater didn’t complain about the “green stuff!”
We had some leftovers which I froze in individual servings for my lunches. I’m happy to say this quiche freezes really well.
This quiche is definitely going to be a staple in our house during the cooler months.
- 1 Easy Low Carb Pie Crust
- 5slices nitrate-free bacon
- 10oz frozen spinach
- 1 cup chopped white mushrooms
- 1/2cup chopped white onion
- 2 cloves garlic, minced
- 1/4cup heavy cream
- 1/2tsp sea salt
- 1cup shredded marble cheese, divided

Preheat oven to 400F.

Prepare and bake Low Carb Pie Crust.

While crust is baking, add bacon to a skillet and cook until browned. Remove from skillet and set aside.

Add the mushrooms, onions, and garlic to the same skillet you cooked the bacon in. Saute over medium heat until mushrooms are soft and browning (approximately 5 minutes.)

Drain liquid from spinach and add to skillet. Stir to mix everything together.

In a bowl, whisk together the eggs, cream, and salt. Stir in half the cheese.

Remove the crust from the oven once done and add the spinach mixture to the bottom of the crust. Pour the egg mixture over the top. Sprinkle with remaining cheese.

Bake in 400 degree oven for 35 - 45 minutes, until the center is set and the quiche begins to brown.

Allow quiche to cool and set for 10 minutes before slicing.
