Enjoy this delicious, grain free, and low carb version of a traditional peanut butter cookie!

My husband has been asking me to make peanut butter cookies for ages! I’m not sure why I’ve waited so long to make them. Maybe because I can’t eat peanuts? I suppose that’s a good thing though since that means I can’t scarf them all down.
Of course, he wanted a traditional peanut butter cookie made with refined flour and sugar. But you know me better than that, don’t you?! I don’t even have those ingredients in my pantry!
So I went on a quest to make a peanut butter cookie that was both grain free and refined sugar free. I wanted to use coconut flour since I think it has a nice sweetness to it which goes well with baked goods.
Overall, the cookies turned out delicious! They had a really nice peanut butter flavour to them and the kids had no idea they were actually healthy.
Hubby liked the taste but wasn’t a huge fan of the coconut flour texture. He is definitely a work in progress when it comes to my low carb way of eating. He would choose the refined sugar, refined flour cookie every time, whereas my goal is to make a healthier treat that still tastes delicious. If my kids and I will eat it and love it, then in my mind, I’ve succeeded.
- 1/2cup coconut flour
- 1/2 cup Swerveor other sugar substitute
- 1 cup natural peanut butter
- 1/4cup buttersoftened
- 3 whole eggs
- 1tsp vanilla extract
- 1/4tsp sea salt

Preheat oven to 350F. Line a baking sheet with parchment paper or spray with coconut oil.

Mix all ingredients together until combined and dough has formed.

Using a Tablespoon, make balls of dough and place on prepared pan.

Flatten each dough ball by making criss-cross marks with a fork.

Bake for 15 - 18 minutes, until edges of cookies are golden brown.
