A low carb meal that is full of flavour and so simple to make!

Who doesn’t love a simple weeknight dinner?!
Now that the weather has turned hot here, and I mean H.O.T., I prefer not to use my oven if I can. No point heating up the kitchen if I don’t have to.
This means we grill a lot or use the crockpot a lot.
I love using the crockpot because I can get everything ready in the morning and let it run all day. It’s so easy!
And this recipe is no exception. Is so stinkin’ easy, you’ll love it!
I prefer to use chicken thighs for this recipe since I find thighs a lot moister than chicken breasts. But you can use chicken breasts if that’s all you have.
For the ranch seasoning, I love using Flavor God. It’s got no added chemicals! If you read the ingredients on a packet of store bought ranch seasoning, you’ll see it’s full of ingredients such as modified “food” starch and soy. Alternatively, you could make my homemade ranch dressing mix and use that.
You can serve this chicken with anything.
We loved it with spaghetti squash, but it would also be great served over cauliflower rice.
A simple and delicious low carb meal, perfect for a weeknight dinner.
Ingredients
- 2 lbs boneless, skinless chicken thighs
- 3 Tbsp butter, cubed
- 4 oz. cream cheese, cubed
- 3 Tbsp ranch seasoning (use Flavor God or this one)
Instructions
- Place chicken in crockpot.
- Place butter and cream cheese cubes on top of chicken.
- Sprinkle with ranch seasoning.
- Cook on low for 6 - 7 hours, or on high for 3 - 4 hours.
- Shred chicken before serving.
