This Low Carb Broccoli Salad pairs well with any meal! It’s so easy to make and tastes delicious.

I absolutely love broccoli. But my husband and kids are a different story. While they eat it when I serve it to them, there are usually some complaints from at least one of them.
When we were eating low fat, high carb, I used to just steam broccoli and then add some “fat free” seasoning to it for flavour. Boring.
But now…broccoli rocks! And, I get no more complaints from the family.
I mean, who doesn’t like broccoli served with a dollop of butter?
Or what about broccoli covered in mayonnaise and bacon?! Now that sounds good!
This salad is a breeze to make! Just put together the easy dressing and toss everything together.
This salad pairs well with any meal. We especially love it with burgers 
A simple and delicious low carb salad.
Ingredients
- 1 large head broccoli, cut into florets
- 4 strips bacon, cooked and diced
- 2 green onions, sliced
- 1/2 cup avocado oil mayonnaise
- 1 Tbsp white vinegar
- 2 - 3 drops stevia
- salt and pepper to taste
- 1/4 cup dried cranberries (optional - not included in nutritional info)
Instructions
- In a small bowl, mix together the mayonnaise, vinegar, stevia, and salt and pepper.
- In a large bowl, add the broccoli and green onions. Toss with dressing. Top with bacon and dried cranberries (if using.)
